Domaine J. Laurens, Clos des Demoiselles 2018. AOP Crémant de Limoux60% Chardonnay, 25% Chenin and 15% Pinot Noir This special bottle was created in honor of the "Brut Originel". The young wine is blended from different grape varieties after tasting. It is in the bottle that the slow evolution of the wine gives birth to the precious foam, to the robe with golden reflections where the majestic strings of delicate bubbles are found. On the palate, the aromas of toast, honey and fresh fruit are perfectly balanced. This sparkling wine is soft and full, powerful and long on the palate. It is delicious throughout the meal, even with exotic dishes such as sushi or tempura. It also goes well with desserts (cheesecake, fruit tart).Domaine de l'Arjolle, 

Equinoxe Chardonnay 2019100% Chardonnay -
 13% Alc - IGP Côtes de ThongueTASTING NOTES Bright yellow with light green highlights. The nose is lively and fruity with typical Chardonnay aromas, the attack is supple and round with flavours of very ripe white fruits. The finish is soft, with notes of brioche and a slight and wine pairing : Scallops, turbot, risotto, white meat...

Laurent Miquel, Albarino 2019
The great white grape of Galicia in north western Spain, is now growing successfully here in the Languedoc. This is an elegant white which will be a perfect accompaniment for any smoked fish or seafood that you may be serving this year, with a wonderful, fruity attack. Dry, crisp and with a delicate hint of smokiness. We think that it reminds us somewhat of a good Sancerre with perhaps a little bit more body. 
Domaine de Cébène, Les Bancels 2018
Brigitte Chevalier, the founder of Domaine de Cébène, considers that it is the wine that offers the newcomer the best introduction to her wines. A classic blend of Syrah, Grenache, Carignan and Mourvèdre, it is a stripped-down wine that is the purest personification of her estate and her philosophy. We find the properties of each grape variety: the structure and fruit of the Syrah's blackcurrant, the round (and perhaps slightly minty) notes of the Grenache, the typical tannin and a hint of astringency of the well-dosed Carignan, and finally the deep, funky mushroom and coffee notes of the Mourvèdre.  

Domaine de l'Herbe Sainte, "Artemesia" 2017
For lovers of big, rich, round wines, this wine is made for you. Intense notes of coffee and black fruit with a hint of mushroom. Pure Syrah, and it certainly has bags of structure. Has won many medals over the years, including Decanter.

Classic Languedoc blend. The Baron range at St Hilaire is made up of wines which have ageing potential, and this 2015 vintage is drinking perfectly now.
